BANANA BREAD MUFFINS

They're cuter than banana bread!

Trying to get rid of those bananas at home? Too many fruit flies flying around? Bananas are overripe? I got the recipe for you! No avocado this time, but still less butter!

Ingredients:

1 and 1/2 cup all purpose flour (187.5 grams)

1 tsp baking powder (4 grams)

1 tsp baking soda (6 grams)

2 large eggs

2 tbsp melted butter (28 grams, if making regular flavor use 56 grams or 4 tbsp)

2 tbsp peanut butter (32 grams, if making peanut butter flavor use 64 grams or 4 tbsp)

1.5 tbsp brown sugar (22 grams)

3 large bananas

Pinch of cinnamon (optional)

Less butter, still delicious and moist, works every time!

Banana Bread Muffins

1. Preheat your oven to 375 F or 190 C. Prepare your muffin pan with muffin liners. Look at my other muffin recipes for DIY parchment liners!

2. In a large bowl, combine flour, baking powder, baking soda, and cinnamon. Whisk well.

3. In a separate bowl, mash up 3 ripe bananas. If they are ripe, they should be pretty easy to mash! Since ripe bananas are naturally sweet, I only added a little brown sugar. You can add more, if you like it to be sweeter. Mix.

4. Crack in 2 eggs, one at a time, and mix between each addition. Add this mixture into your dry ingredients. Mix; you'll see that this mixture will be on the drier side, and that's ok!

5. If you're making two flavors, divide the batter and add your melted butter and melted peanut butter (Melt in microwave for 20 seconds). If you're only making one flavor, add in just the butter or peanut butter. Mix and add in a splash of milk if it's still too dry.

6. Pour the batter into your muffin pan. Add toppings like chocolate, nuts, and granola if desired.

7. Bake at 375 F or 190 C for 8 minutes. Then, turn down the temperature to 350 F or 180 C for 15-20 minutes.
