COFFEE CAKE MUFFINS
Who doesn't love a little coffee flavor?
This recipe is so a-may-zing! Topped with a streusel crumb topping, this recipe gives just the right amount of coffee, sugar, and cake!
Ingredients:
A little less than 2 cups flour (250 grams)
⅔ cup sugar (140 grams)
2 tbsp brown sugar (29 grams)
2 eggs
3 tbsp melted butter (44 grams)
2 tbsp oil (27 grams)
1 cup buttermilk (milk and 1 tbsp vinegar) (270 grams)
1 tsp vanilla (~2 grams)
3 tablespoons coffee powder (38 grams)
1/2 teaspoon cinnamon powder (3 grams)
2 tsp baking powder (~6 grams)

Coffee Cake Muffins
1. Oil your muffin tin lightly. You may need more oil if you're not using non-stick muffin liners. I'm using parchment paper liners, which are also very lightly oiled.
2. Combine flour, baking powder, and some of the coffee powder. Whisk well.
3. Add your melted butter and sugar together. Add in your egg, vanilla, buttermilk, and oil. Mix well. Add these ingredients into your dry. Mix until just incorporated.
4. Combine the rest of your coffee powder and cinnamon powder.
5. Scoop the batter into each muffin hole about 1/2 way. Then, add the coffee/cinnamon mixture on top of that. Scoop more batter on top of that. Take a chopstick or knife and swirl it around. Top with some streusel. Bake at 400 F for 8-10 mins and then turn down the temperature to 350 F for 20 min.

The Streusel
1. Combine 1/2 cup sugar (white or brown or both) and 1/2 cup all purpose flour. Also, add in a pinch of salt. Add in a little cinnamon and coffee powder. These amounts will depend on your personal taste and whether you love a strong cinnamon coffee flavor or not. Add in 4 tbsp of diced cold butter. Add in a splash of milk to help it combine if needed. Rub this between your fingers until it looks pretty much like crumbs.
