CORNBREAD MUFFINS
Who doesn't love corn?
This recipe is the one for breakfast! Get them baked the night before or make the batter and bake them in the morning! This will keep you full for hours and it's full of nutrition!
Ingredients:
1/2 cup all purpose flour (62.5 g)
1/4 cup coarse grind cornmeal (30 g)
1 tbsp oil (16 g)
1 large egg
1/4 cup water (60 g)
2 tablespoons milk (30 g)
2 teaspoons baking powder (8 g)
2 teaspoons sugar (10 g)
2-3 tbsp honey (44-64g)
1/3 cup corn (54g)

Cornbread Muffins
1. Combine flour, cornmeal, oil, egg, water, milk, baking powder, sugar, and honey all in one bowl. Oh, and preheat your oven to 350 F or 180 C.
2. Mix well.
3. Add in your corn. I'm using frozen sweet corn, but you can use fresh corn from the cob.
4. Mix the corn into your batter.
5. Line your muffin wells or oil them and pour your batter into your muffin wells. Bake for 15-20 minutes until a toothpick comes out clean.
