ONE EGG SPONGE CAKE

Have you ran out of eggs? Here's the recipe for you!

Perhaps you only want a small amount of cake or you're looking for something that only needs one egg. I've got you covered!

Ingredients:

1 egg

1 tsp lemon juice (optional)

1 tsp lemon juice or *white vinegar

2 tablespoons sugar

1.5 tablespoons milk

a little less than 1 tablespoon oil

1/2 teaspoon vanilla extract

3 tablespoons cake flour

*If you're using white vinegar, I suggest using about a 1/2 tsp or less so that it doesn't give too much flavor :)

One Egg Sponge Cake

1. Preheat your oven to 320 degrees Fahrenheit. Separate the egg yolk and egg white into two separate bowls. I suggest bringing your eggs to room temperature but it's not necessary.

2. In the egg yolk, add a little bit of the sugar, add the optional lemon juice, milk, oil, vanilla extract. Mix well. 

3. Add the cake flour, which is ideal, or all purpose flour. Mix until combined. Don't over mix to form gluten!

4. In the egg white, add the lemon juice or white vinegar to help them stabilize. Whip until it is foamy and then add sugar a little at a time. Whip until medium peaks. 

5. Add a little bit of the egg white into the egg yolk and mix. Then at the egg yolk into the egg white and fold the mixture until well combined.

6. Pour the mixture into a oiled pan lined with parchment paper on the bottom. Bake for 15 minutes and then check on your cake. Stick a toothpick in and it should come out clean. Keep an eye on the cake using the light but don't open the oven door! 

7. Enjoy with some whipped cream and fresh fruit!

Perfect one person dessert!
